Ingredients

The ingredients are:
  • 1 pound hot Italian sausage, uncooked (if using sweet Italian sausage then add in 1/4 teaspoon hot chili flakes)
  • 1 1/4 pound ground beef
  • 1/3 cup dry bread crumbs
  • 1 box (10 ounce) frozen chopped spinach (thawed and squeeze out moisture)
  • 2 large eggs, lightly beaten
  • 4 to 6 garlic cloves, minced
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon black pepper, freshly ground
  • 1/2 cup Parmesan cheese, grated
  • 3 to 4 tablespoons oil-packed sun-dried tomatoes, minced

How to Make

  • Step 1: Preheat oven to 375 degrees.

  • Step 2: In a large bowl, crumble the ground beef and sausage meat breaking sausage up into small pieces. Add breadcrumbs, spinach eggs, garlic, salt, pepper parmesan cheese and sun-dried tomatoes. Mix with your hands until well blended.

  • Step 3: Shape into 1-inch balls.

  • Step 4: Place meatballs in single layers on two greased jelly-roll pans not allowing them to touch.

  • Step 5: Bake 20 to 25 minutes, until meatballs are cooked through and lightly browned.

  • Step 6: Drain on paper towels. Serve hot or cool and freeze.
