Step 1: Butter (or use cooking spray) a 1 1/2 quart casserole (7 1/2 inch). Preheat oven to 350F.
Step 2: Heat milk and butter to scalding.
Step 3: Place bread cubes in a large bowl and pour milk and butter mixture over bread, making sure all the bread is soaked. Let cool slightly.
Step 4: In another bowl, lightly beat eggs and add sugars, salt and spices.
Step 5: Pour this mixture over bread and milk and stir in raisins (or dried cranberries). Mix well.
Step 6: Pour mixture into prepared casserole and bake for 40-45 minutes, or until a knife inserted into mixture comes out clean.
Step 7: Serve warm or at room temperature, with hard sauce or cream, if desired.
