The ingredients are:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking Powder
  • 1/2 teaspoon salt
  • 3 large bananas, mashed (ripe bananas)
  • 3/4 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1/2 cup butter, melted
  • 1/2 cup walnuts, chopped
  • TOPPING
  • 2/3 cup light-brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 to 1 teaspoon ground cinnamon
  • 2 tablespoons butter (cold cut into small pieces)

How to Make

  • Step 1: In a large bowl, combine dry ingredients.

  • Step 2: In another bowl, combine mashed bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened (do this by hand, do not use an electric mixer). Gently stir in nuts.

  • Step 3: Fill greased or paper lined muffin cups three fourths full.

  • Step 4: For the topping; Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375 degrees for 18-20 minutes or until muffins test done.

  • Step 5: Cool in pan 10 minutes before removing to a wire rack.
