Step 1: Tomato Jam ... Add the tomatoes, onions, peppers, red wine, and brown sugar to a small saute pan or pot. Bring to medium high heat, stir to combine; then, reduce to medium low. Simmer 30-40 minutes until the tomatoes are thick and 'jam like.' Stir occasionally.
Step 2: Once the jam is thick, cool completely, and transfer to a small mason jar; or tupperware type of container; and, refrigerate until ready to use.
Step 3: It is not only great with my 'Fried Green Tomatoes,' but; it is delicious as a condiment on sandwiches; or with grilled seafood, chicken, steak, or pork.
Step 4: It will last for up to a month in the refrigerator. ENJOY!
