  • The following recipe serves 8-12 people.

Ingredients

The ingredients are:
  • 2 1/4 cups tomatoes, chopped (lightly seeded and rough chopped, skin on)
  • 1 cup red onions, diced
  • 1 tablespoon red pepper, minced (seeds and ribs removed and minced, I used a red jalapeno, you could use a cubanelle or anaheim if you don't like heat)
  • 2 1/2 ounces red wine vinegar
  • 4 1/2 ounces brown sugar (more if you like it a bit sweeter)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Tomato Jam ... Add the tomatoes, onions, peppers, red wine, and brown sugar to a small saute pan or pot. Bring to medium high heat, stir to combine; then, reduce to medium low. Simmer 30-40 minutes until the tomatoes are thick and 'jam like.' Stir occasionally.

  • Step 2: Once the jam is thick, cool completely, and transfer to a small mason jar; or tupperware type of container; and, refrigerate until ready to use.

  • Step 3: It is not only great with my 'Fried Green Tomatoes,' but; it is delicious as a condiment on sandwiches; or with grilled seafood, chicken, steak, or pork.

  • Step 4: It will last for up to a month in the refrigerator. ENJOY!
