The ingredients are:
  • 1 egg yolk
  • 3 to 4 tablespoons parmesan cheese, grated
  • 1/4 cup oil (extra virgin olive oil)
  • 1 teaspoon anchovy paste (or to taste)
  • 1 teaspoon dijon mustard (or to taste)
  • 2 to 3 small garlic cloves, minced (or pressed)
  • Salt and pepper, to taste

How to Make

  • Step 1: Add the garlic, the anchovy paste, mustard and egg yolks to a large bowl and blend together until thick and smooth.

  • Step 2: While whisking, slowly drizzle in the olive oil until you have a smooth emulsion, but you may need to add more depending on the freshness of your eggs.

  • Step 3: Season with some salt and ground pepper.

  • Step 4: Chill for a few hours to blend the flavors.
