Ingredients

The ingredients are:
  • Panko bread crumbs (as you need)
  • 1 can (14.75 ounce) salmon (red sockeye)
  • 2 large eggs
  • 1/4 cup yellow onion, minced
  • 1 garlic clove, minced
  • 1/2 cup crushed crackers (unsalted tops saltines)
  • Cayenne pepper, pinch
  • 1 tablespoon dried parsley
  • 1 lime, whole (small lime, juiced, or a lemon, juiced)
  • 2 teaspoons fresh dill
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (or more)
  • Canola oil or olive oil (for frying)

How to Make

  • Step 1: Place some panko in a shallow dish.

  • Step 2: In a bowl mix all the rest of the ingredients (except the oil). Mix with your hands until combined, If they are too mushy add a few more crushed crackers, too dry a little more lime juice.

  • Step 3: Shape into patties. Coat the patties in the panko and coat both sides.

  • Step 4: Heat oil in a skillet (turn down heat slightly when you put in the patties because you don't want them to burn before they cook).

  • Step 5: Add patties to oil then cook one side, after they have cooked on one side take your spatula and carefully lift up one side to see if they are brown underneath, if they are, then turn over. Cook till both sides are golden brown.
