Ingredients

The ingredients are:
  • 1/4 cup bacon fat (a.k.a. bacon grease)
  • 1/3 cup onion, finely chopped (can use more if you like)
  • 3/4 cup cooked ham, diced (can use more)
  • 1 can (15 ounce) black eyed peas (drained and save half of the liquid for the can size, get as close as you can)

How to Make

  • Step 1: In a medium sized sauce pan over medium heat, melt the bacon drippings until hot but not smoking and add onions.

  • Step 2: Cook onions until slightly softened and lightly browned.

  • Step 3: Add ham and cook until lightly browned.

  • Step 4: Then add beans and reserved liquid,bring to a boil.

  • Step 5: Reduce heat to low and let simmer for 20 to 25 minutes,stirring occasionally.
