Step 1: Whipped Cream Base ... Add the cream, sugar, and mulling spice to a small pot; and, bring to a light boil. As soon as it begins to boil, remove from the heat, and let it stand 10 minutes.
Step 2: Then, strain the cream mixture in a fine sieve, or you can use a double layer of cheese cloth in a colander; into a bowl. Cover with plastic wrap, and refrigerate at least 1-2 hours, until well chilled.
Step 3: Coffee ... Brew your favorite coffee. I like a nice robust blend; but, you can use anything you enjoy.
Step 4: Whipped Cream ... As the coffee brews, make your whipped cream. Beat the whipped cream using a whisk, hand or stand mixer; until you get stiff peaks.
Step 5: Serve and ENJOY! ... Add 1 oz of the brandy and 1 teaspoon sugar to each coffee mug or cup; add the coffee, then mix to combine. I don't like mine too sweet, but add as much sugar as you like. Then, top with a "hefty" dollop of the 'mulled' whipped cream. Garnish with a little ground cinnamon or stick, nutmeg; or, your favorite chocolate shavings. HAPPY HOLIDAYS!
