Ingredients

The ingredients are:
  • 1 pound fresh salmon
  • 6 tablespoons oil (extra virgin olive oil)
  • 1 whole lemon, juiced
  • 1 teaspoon kosher salt (or sea salt)
  • 1/2 teaspoon freshly ground black pepper
  • 1 to 2 tablespoons dried parsley
  • 1/2 whole lemon (cut into slices)
  • 3 teaspoons butter (optional)

How to Make

  • Step 1: Run the salmon under cold water and pat dry with paper towels, set aside.

  • Step 2: In a large oven-proof baking dish add 3 tablespoons of olive oil and place the salmon in the dish.

  • Step 3: Sprinkle the salmon with the remaining 3 tablespoons of olive oil.

  • Step 4: Add in this order. The lemon juice, black pepper, kosher salt, dried parsley and lemon slices. Add the 3 teaspoons of butter if using.

  • Step 5: Cover with foil and bake in a preheated 350% oven for 45 minutes or until cooked through and tender.

  • Step 6: Serve with long grained rice and steamed asparagus.
