Ingredients

The ingredients are:
  • 3 1/2 cups coconut milk (or 2 cans, 400ml each, the good kind that is REALLY thick, I use 11% fat)
  • 6 1/2 cups whole milk (3.25%)
  • 1/2 cup granulated sugar (if you like it sweeter add in more, I would start with 1/2 cup and add in more if you want towards the end of cooking)
  • 1/4 teaspoon salt
  • 2 teaspoon ground cinnamon (or to taste)
  • Pinch fresh ground nutmeg
  • 1 1/4 cups rice (scant, dry white long grain)

How to Make

  • Step 1: In a large heavy saucepan, combine all ingredients. Bring to a simmer stirring. Reduce heat to medium-low and simmer uncovered or covered for about 45-60 minutes, stirring very often.

  • Step 2: This thickens even more upon standing.
