Step 1: In medium bowl, beat eggs & milk until blended. Place crumbs on waxed paper or in a pie plate. Dip each chop into egg, then in crumbs to coat each side.
Step 2: In large skillet (that has a lid), heat oil over medium heat. Add 3 chops & cook until browned on each side. Remove and cooke remaining 3 chops. Remove those and set aside.
Step 3: In same skillet, add in potatoes, onions and pepper strips. Season with the salt & pepper. Return chops to the pan on top of the potato mix. Cover and reduce heat to medium low. Cook about 50 minutes.
Step 4: Remove chops and keep warm. Raise heat to medium high heat and cook potatoes until browned.
