Ingredients

The ingredients are:
  • 1/2 cup semi-sweet chocolate chips (regular size)
  • 1/2 cup semi-sweet chocolate chips (mini chips)
  • 1 package (8 ounce) cream cheese (at room temperature and only use Philadelphia brand)
  • 1/2 cup confectioners sugar (or a little more depending on how sweet you want the truffles to be)
  • 1/2 cup graham cracker crumbs
  • 1 tablespoon Pure Vanilla Extract
  • 1/8 teaspoon salt
  • Sweetened flaked coconut, sprinkles and chocolate graham crumbs, for coating

How to Make

  • Step 1: Melt 1/2 cup regular size chocolate chips in a double boiler.

  • Step 2: Meanwhile, using an electric mixer, beat the cream cheese until smooth. Add confectioners sugar, graham crumbs, vanilla and salt, and blend well. Mix in the melted chocolate and the remaining 1/2 cup mini chocolate chips. Cool mixture in the freezer until firm, about 15 min.

  • Step 3: Hand-roll into balls the size of large marbles.

  • Step 4: Roll balls in coconut, sprinkles or graham crumbs until well coated. Return to freezer and chill thoroughly, about 15 min., or until ready to serve or wrap up.
