Ingredients

The ingredients are:
  • 1/4 cup Italian salad dressing
  • 1 teaspoon grated fresh ginger
  • 2 teaspoon granulated sugar (or splenda substitute)
  • 1 tablespoon oil (olive oil)
  • 1 medium red bell pepper, seeds removed (cut into 1/4" strips)
  • 1/2 medium sweet onion, thinly sliced
  • 2 cups baby bok choy, cut into 1 inch pieces
  • 1 pound raw shrimp, medium (peeled, deveined)

How to Make

  • Step 1: Mix together the dressing, ginger and sugar

  • Step 2: Heat oil (medium high) in a large skillet

  • Step 3: Add peppers and onions

  • Step 4: Stir-fry 2 minutes

  • Step 5: Add Bok choy stir-fry 1 minute

  • Step 6: Add 1 tablespoon of the dressing mixture to the skillet

  • Step 7: Add shrimp stir fry 1 minutes

  • Step 8: Add remaining dressing

  • Step 9: Stir-fry 1-2 minutes or until the shrimp are pink and everything is piping hot
