  • 3/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon green bell pepper, minced
  • 1 tablespoon onion, minced
  • 1 tablespoon pimiento, minced
  • 1/4 cup American cheese, grated
  • 1/2 cup cheddar cheese, grated
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 2 tablespoons yellow cornmeal

How to Make

  • Step 1: Preheat oven to 400°F. Coat 12 muffin cups with nonstick cooking spray.

  • Step 2: In a small bowl, mix eggs, milk and butter.

  • Step 3: In a large bowl, combine remaining ingredients.

  • Step 4: Add the egg mixture to the flour mixture and stir just to mix (there will be lumps).

  • Step 5: Pour into muffin cups and bake for 25 to 30 minutes, or until done.

  • Step 6: Turn out onto wire rack and cool slightly.
