Ingredients

The ingredients are:
  • COWPOKE BBQ SAUCE
  • 3/4 cup chopped green onions
  • 3 cloves garlic, minced
  • 1 (14 1/2 ounce) can crushed tomatoes
  • 1/2 cup ketchup
  • 1/4 cup water
  • 1/4 cup orange juice
  • 2 tablespoon cinder vinegar
  • 2 tablespoon chili sauce (I used about 1 tsp chili powder)
  • Dash Worcestershire sauce
  • CHICKEN FAJITAS
  • 1 pound boneless skinless chicken breasts (cut lengthwise into 1x1/2-inch pieces)
  • 2 green or red bell peppers, thinly sliced
  • 1 cup sliced onion
  • 2 cup tomato wedges
  • 1 cup corn
  • Flour tortillas, warmed

How to Make

  • Step 1: Combine all BBQ Sauce ingredients in pot and simmer on top of stove while chicken is cooking in skillet.

  • Step 2: In large skillet, melt oil and saute chicken over medium heat until browned.

  • Step 3: Add all fajita ingredients, except for tortillas, to slow cooker, stir well and cook on low 3-4 hours or until chicken is no longer pink and veggies are tender.

  • Step 4: Add tomatoes and corn and cook 30 to 45 minutes or until heated through. Place a little in each tortilla, top with cheese, if desired, and serve. Makes 4+ servings.
