Ingredients

The ingredients are:
  • POTATO SALAD BASE
  • 2 large potatoes (baked, peeled and diced into small bite size pieces, 4 cups)
  • 4 bacon slices (cooked crisp and crumbled, or use 1/3 cup real bacon bits from a jar)
  • 1/8 cup red onion, finely chopped
  • 2 tablespoons fresh chives, finely chopped (or 1 Tablespoon dried chives)
  • SALAD DRESSING
  • 1/3 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste

How to Make

  • Step 1: In a medium sized bowl mix together salad dressing ingredients and chill for about 10 minutes.

  • Step 2: After dressing has chilled, add everything else except the potatoes, stirring well.

  • Step 3: Now gently fold potatoes into mixture, making sure potatoes are evenly covered.

  • Step 4: Chill for at least 3 hours taste to see if seasonings need to be adjusted, at this point if you like you can add more sour cream.
