Step 1: Preheat oven to 350º. Coat a loaf pan with cooking spray.
Step 2: In a large bowl add the flour, bran, flax, baking powder and spices. Whisk to combine.
Step 3: In a medium bowl, add the oil and brown sugar and whisk to combine. Add the eggs, whisking again to combine well.
Step 4: Whisk in the milk and vanilla. Stir in the mashed banana.
Step 5: Sprinkle the diced apples over the dry ingredients, then pour the wet ingredients into the dry ingredients and stir gently, just until combined.
Step 6: Pour the batter into your prepared loaf pan.
Step 7: Bake 50 minutes, or until the bread is golden brown and a skewer inserted into the center comes out clean.
Step 8: Cool on a wire rack 10 minutes and remove from pan to cool completely.
Step 9: Note: Baking times for regular loaf=50 minutes, for mini loaves=25-35 minutes, for muffins=about 20 minutes.
