Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup oat bran
  • 1/4 cup ground flax meal
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon powdered ginger
  • 1/4 teaspoon ground cardamom
  • 1/3 cup oil (canola oil)
  • 1/3 cup brown sugar
  • 2 large eggs
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 2 bananas, medium (mashed very ripe)
  • 1 apple, medium (peeled cored and diced)

How to Make

  • Step 1: Preheat oven to 350º. Coat a loaf pan with cooking spray.

  • Step 2: In a large bowl add the flour, bran, flax, baking powder and spices. Whisk to combine.

  • Step 3: In a medium bowl, add the oil and brown sugar and whisk to combine. Add the eggs, whisking again to combine well.

  • Step 4: Whisk in the milk and vanilla. Stir in the mashed banana.

  • Step 5: Sprinkle the diced apples over the dry ingredients, then pour the wet ingredients into the dry ingredients and stir gently, just until combined.

  • Step 6: Pour the batter into your prepared loaf pan.

  • Step 7: Bake 50 minutes, or until the bread is golden brown and a skewer inserted into the center comes out clean.

  • Step 8: Cool on a wire rack 10 minutes and remove from pan to cool completely.

  • Step 9: Note: Baking times for regular loaf=50 minutes, for mini loaves=25-35 minutes, for muffins=about 20 minutes.
