Ingredients

The ingredients are:
  • 1 1/2 pounds Italian sausage links (hot, casings removed)
  • 1 1/2 cups grated zucchini
  • 1/2 cup finely chopped sweet onion
  • 1/3 cup finely chopped fresh parsley
  • 1/4 cup panko crumbs
  • 1 large egg, beaten
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried rosemary, ground
  • 4 medium red bell peppers (cut lengthwise, seeds removed)

How to Make

  • Step 1: Preheat oven to 350f

  • Step 2: Mix together all the ingredients except peppers

  • Step 3: Mix until well blended

  • Step 4: Fill the half peppers with the stuffing,

  • Step 5: The peppers should be slightly mounded

  • Step 6: Place in 13"X 9"X 2"oven proof dish

  • Step 7: Bake peppers uncovered until the tops are browned and internal temp is 165F Apprx 1 hour
