Ingredients

The ingredients are:
  • 1 tablespoon oil (vegetable oil)
  • 1 pound, boneless, skinless chicken breasts (cut lengthwise in half)
  • 1 tablespoon chopped red onion
  • 1 cup fresh orange juice
  • 2 teaspoons corn starch
  • 2 tablespoons water
  • 1 tablespoon brown sugar (or splenda brown sugar substitute)
  • 1/4 cup mango chipotle salad dressing (Kraft)
  • 4 thin navel orange slices
  • 1 tablespoon chopped Italian parsley

How to Make

  • Step 1: Heat oil in skillet, medium high heat, add chicken cook 4-5 minutes each side or until cooked.

  • Step 2: Remove, keep warm

  • Step 3: Add onions and orange juice, bring to boil

  • Step 4: Simmer 3 minutes, scrape brown bits from bottom

  • Step 5: Make a slurry of the corn starch and water

  • Step 6: Whisk together the corn starch, sugar and dressing until blended.

  • Step 7: Pour into skillet, stir and cook for until sauce is thickened about 1 minute

  • Step 8: Add chicken and orange slices, cook 1 minute

  • Step 9: Arrange on a platter with the orange slices on top
