  • 2 pounds chicken breast, boneless, skinless (or boneless, skinless chicken thighs)
  • Ground pepper
  • Garlic powder
  • 1 cup salsa (homemade or purchased)
  • 1 can (14 ounce) petite diced tomatoes
  • 2 tablespoons taco seasoning mix
  • 1 onion, diced fine
  • 1 celery rib, diced fine
  • 1 carrot, shredded
  • 1/4 to 1/2 cup sour cream

How to Make

  • Step 1: Heat a little oil in a large skillet until hot (medium-high heat).

  • Step 2: Season the breast with a little pepper and garlic powder. Add to the skillet and brown both sides.

  • Step 3: Place the chicken in a slow cooker.

  • Step 4: Sprinkle the taco seasoning over the meat, then layer the vegetables and salsa on top.

  • Step 5: Pour a half cup water over the mixture, set on low and cook for 6-8 hours. The meat is cooked when it shreds or reaches an internal temperature of 165°F.

  • Step 6: When ready to serve, break up the chicken with two forks then stir in the sour cream.
