Ingredients

The ingredients are:
  • 12 small white or red potatoes, peeled
  • 1 beef chuck roast, about 3 lbs, trimmed of most fat
  • 1 tablespoon canola or olive oil
  • 1 cup chopped onion
  • 2 cloves minced garlic
  • 1 (15 ounce) can tomato sauce
  • 1/4 cup packed brown sugar
  • 2 to 3 tbsp worchestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1 tsp salt, plus salt & pepper to season roast

How to Make

  • Step 1: Place potatoes in bottom of slow cooker.

  • Step 2: Trim fat from roast. Season meat well with salt and pepper on all sides. heat oil in skillet, brown meat on all sides.

  • Step 3: Place meat on top of potatoes in the crockpot.

  • Step 4: Brown onions and garlic in the pan drippings.

  • Step 5: Add the tomato sauce, brown sugar, apple cider vinegar, worcestershire sauce, and salt to onions and garlic.

  • Step 6: Pour this sauce mixture over the roast.

  • Step 7: Cover and cook on high 4 to 5 hours until meat is tender (6 to 7 if cooked on low).

  • Step 8: Before serving, place the sauce in a saucepan. Cook until thickened. Pous over meat as a gravy.
