The ingredients are:
  • 1 1/2 cups self-rising flour (or to regular flour add 2 tsp baking powder and 1/2 tsp salt)
  • 1/2 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1 1/2 teaspoon cinnamon
  • 1/2 cup banana, mashed (ripe)
  • 1/3 cup oil (vegetable oil)
  • 1 egg, lightly whisked
  • 3/4 cup milk
  • FOR FROSTING
  • 250 grams low-fat cream cheese
  • 4 tablespoons icing sugar
  • 2 teaspoons finely grated lemon zest
  • Lemon juice, to thin (if needed)

How to Make

  • Step 1: Preheat oven to 375F.

  • Step 2: Spray 3 mini muffin tins or fill with mini muffin cups.

  • Step 3: In medium bowl, combine flour, baking soda, sugar and cinnamon; make a well in the center.

  • Step 4: Whisk mashed banana, oil, egg and milk together in bowl; pour into flour mixture and gently mix until just combined.

  • Step 5: Spoon into prepared cups, filling 3/4 full.

  • Step 6: Bake for 10 -12 minutes or until toothpick comes out clean.

  • Step 7: Set aside to cool.

  • Step 8: Frosting: Beat cream cheese, icing sugar and zest in medium bowl until light and fluffy; thin with lemon juice if desired.

  • Step 9: Spread a wee bit of the icing on each muffin.
