The ingredients are:
  • 1 pound boneless skinless chicken thighs (4 thighs)
  • 1 1/2 teaspoons lemon juice
  • 4 ounces low-fat Greek yogurt (plain, 1/2 cup)
  • 1 teaspoon fresh garlic, minced
  • 1/4 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon fresh mint, minced

How to Make

  • Step 1: Place chicken thighs and lemon juice in a zip-top plastic bag; shake to coat.

  • Step 2: Whisk together remaining ingredients; pour into bag and squeeze out excess air, then squish around to completely coat chicken with yogurt mixture.

  • Step 3: Marinate in refrigerator at least four hours up to 24 hours.

  • Step 4: Preheat oven to 350F; spray a baking dish with 2-inch sides with cooking spray.

  • Step 5: Place thighs in prepared pan; pour marinade over top.

  • Step 6: Bake at 350F for 40 minutes, turning once halfway through.
