Ingredients

The ingredients are:
  • 1 tablespoon milk
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 teaspoon pepper
  • 1 teaspoon salt (seasoning salt, Lawry`s)
  • 1 tablespoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoons dried oregano
  • 1/2 teaspoon dried basil
  • 3 to 4 ounces feta, (finely crumbled)
  • 3 ounces cream cheese, softened (one 3 ounce package)
  • 4 chicken breasts, boneless skinless (pounded to about 1/4 inch or a little larger)
  • Oil (as you need it for browning)

How to Make

  • Step 1: Preheat oven to 300°F.

  • Step 2: Grease an 8x8 inch baking dish.

  • Step 3: Heat a small amount of oil in saute pan to med-high heat.

  • Step 4: Mix bread crumbs with pepper, seasoning salt and garlic powder.

  • Step 5: In a small bowl, combine 1/2 teaspoons basil, 1/2 teaspoons oregano and 1/2 teaspoons Italian seasoning.

  • Step 6: In a separate bowl whisk together the eggs with milk.

  • Step 7: Lay out pounded chicken and spread each piece with 1/4 of cream cheese, sprinkle with 1/4 of the herb mix then lastly, 1/4 of the crumbled feta.

  • Step 8: Roll up, then secure with large wood toothpicks.

  • Step 9: Dip rolled chicken breasts in egg wash then in breadcrumbs, coating well.

  • Step 10: Brown chicken on all sides (about 3 minute per side) and place on foil lined pan.

  • Step 11: Bake in oven for 20 minute or until cooked through.
