Ingredients

The ingredients are:
  • 2 cups white rice, cooked (2 cups cooked)
  • 2 cups chicken, cooked (cubed)
  • 1/4 cup onion (chopped)
  • 1/4 cup jalapeno (pickled rings from a can, you can leave them out or reduce amount, I had some handy and I like things spicy so I added it)
  • 1/3 cup celery (finely chopped)
  • 3 garlic cloves, minced
  • 2 (10.75 ounce each) cans condensed cream of celery soup, undiluted
  • 1/2 cup mayonnaise
  • 1/2 curry powder
  • 10 ounces broccoli, fresh, chopped (light steamed)
  • Salt & pepper

How to Make

  • Step 1: In a large bowl, mix first 5 ingredients.

  • Step 2: Second bowl combine next 4.

  • Step 3: Mix in broccoli, salt and pepper.

  • Step 4: Transfer to a 9x13 greased baking dish, and cover with aluminum foil.

  • Step 5: Bake for 45 to 50 minutes in the preheated oven.

  • Step 6: Remove the aluminum foil for the last 5-7 minutes in the oven.
