Step 1: Preheat oven to 400°F. Coat 12 muffin cups with cooking spray.
Step 2: Whisk eggs and brown sugar in a medium bowl until smooth. Whisk in mashed bananas, buttermilk, wheat bran, oil and vanilla.
Step 3: In second large bowl, combine the whole-wheat flour, all-purpose flour, baking powder, baking soda, cinnamon and salt. Make a well in the dry ingredients; add the wet ingredients and stir with a rubber spatula until just combined.
Step 4: Stir in nuts if using.
Step 5: Let batter sit for 10 minutes on the counter (before scooping and baking).
Step 6: Scoop the batter into the prepared muffin cups (they’ll be quite full).
Step 7: Bake the muffins for 20 to 25 minutes or until they test done.
Step 8: Let cool in the pan for 5 minutes. Loosen edges and turn muffins out onto a wire rack to cool slightly before serving.
