Step 1: Saute ... In a large saute pan, add the olive oil (start out with 2 teaspoons); and, bring to medium high heat. Add all the vegetables (except the garlic), along with a pinch of salt and pepper; and saute for 3-4 minutes. Then reduce the heat to medium low, add the garlic; and, saute another 2-3 minutes until all the vegetables are tender. As the vegetables cook, add additional olive oil, but only if necessary.
Step 2: Finish ... Add the chili sauce (start with 1/4 cup; add more if you like it a bit more 'saucy'); and season again - only if necessary, with salt and pepper. Add the brown sugar and splash of cider vinegar. Reduce the heat to low, and simmer 3-4 minutes to combine all the flavors.
Step 3: Serve and ENJOY! ... This is just a simple condiment or sauce, which is fantastic over grilled chicken, pork, steak, or even seafood. It also makes a great topper for a sandwich or burger. This can easily be made a day or two in advance; but, I wouldn't keep it for more than 3-4 days in the refrigerator. You can use any brand of chili sauce; 'Heinz' is what I prefer.
Step 4: Note: If you like, you can also add sliced button (or white) mushrooms to this mix; as well as, hot cherry peppers. The mushrooms add a nice 'meaty texture;' and, the cherry peppers, are actually NOT all that hot, but add a nice unique flavor.
