Ingredients

The ingredients are:
  • Fajita shells (2 large shells)
  • 2 cups ground beef, cooked (seasoned with taco seasoning)
  • 1 cup refried beans (I use canned Old ElPaso)
  • 4 cheese slices, cheddar
  • 2 romaine lettuce leaves (optional)
  • 1/4 cup salsa
  • 2 green onions, white and green parts, finely chopped

How to Make

  • Step 1: Mix together the meat and beans and heat through in oven or microwave.

  • Step 2: Place the cheddar cheese on top of the fajita shells and warm in oven or microwave until cheese is melted.

  • Step 3: Add the romaine leaf over the cheese and top with the meat and bean mixture.

  • Step 4: Divide the onion and salsa sauce over the meat mixture and roll up the shell tucking the bottom end in so it will not drip.

  • Step 5: Enjoy.
