Ingredients

The ingredients are:
  • 2 cups mushrooms, fresh (sliced)
  • 2 tablespoons butter (or margarine)
  • 3 garlic cloves, minced (large)
  • 16 to 24 ounces sole fish, fillets (4-6 ounces each)
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon hot paprika
  • 1/4 teaspoon cayenne pepper
  • 8 cherry tomatoes (Yellow or orange cherry tomatoes whole or 1 medium red tomato chopped)
  • 2 green onions, sliced (white and green parts)

How to Make

  • Step 1: Melt the butter in a large skillet, add mushrooms, stir for apprx 3 minutes or until they are tender

  • Step 2: Add garlic continue cooking 2 minute

  • Step 3: Place fillets over the mushrooms, medium heat

  • Step 4: Sprinkle on the lemon juice, paprika, cayenne, add tomatoes

  • Step 5: Cover and cook over medium low heat for about 10 minutes or until the fish flakes nicely

  • Step 6: Sprinkle on the onions and serve
