Ingredients

The ingredients are:
  • 2 1/2 pounds tomatoes (4 large beefsteak or heirloom tomatoes)
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 tablespoon white wine (optional)
  • 1/2 tablespoon fresh basil or mint, minced
  • 1/4 cup olive oil (extra-virgin)
  • Salt & pepper to taste
  • Fresh basil, mint leaves or parsley for garnish

How to Make

  • Step 1: In bowl, whisk together the mustard, lemon juice, wine and basil or mint.

  • Step 2: Slowly whisk in oil, beating continuously until the dressing is thoroughly blended.

  • Step 3: Add salt & pepper to taste; refrigerate.

  • Step 4: Just before serving, slice the tomatoes.

  • Step 5: Arrange tomatoes on platter.

  • Step 6: Drizzle the vinaigrette over tomatoes, add garnish and serve.
