Step 1: In a medium saucepan bring 4 cups water, 3/4 cup sugar, ginger and 5 strips lemon zest to boil. Lower heat and simmer 10 minutes; discard lemon zest and ginger. Stir in lemon juice and 1 cup water; heat through and stir in remaining sugar to taste. Ladle into mugs and garnish with remaining lemon zest strips.
