Step 1: Preheat oven to 450f degrees.
Step 2: Combine all ingredients, except the chicken, in a blender; puree.
Step 3: Cut 2 deep slits in each drumstick, marinate in the coconut mixture at least 1 hour or up to 8 hours. Transfer chicken to a rack placed on a foil lined baking sheet, season with salt and freshly ground pepper. Bake in preheated oven for 20 minutes; flip and bake until cooked through, a further 10 minutes.
