Ingredients

The ingredients are:
  • 2 pounds turkey sausage links (or sausage of your choice - 4 large)
  • 1 1/2 cups barbecued sauce (I used home made bbq sauce)
  • 1 tablespoon oil (olive oil)
  • 1/2 cup fresh chopped mushrooms
  • 1/2 cup chopped onions
  • 1 teaspoon liquid smoke
  • 1/4 cup red wine (or 1/4 cup tomato juice or water)
  • 1/4 cup grated Parmesan cheese

How to Make

  • Step 1: Preheat oven to 350f.

  • Step 2: In a saucepan boil enough water to cover the sausage, puncture each sausage a couple of times with a fork and drop the sausage into the boiling water, boil for about 5 minutes.

  • Step 3: In the meantime heat the olive oil in a medium frypan; saute the mushrooms and onion until the onion is transparent, about 5 minutes.

  • Step 4: Remove the sausage from the boiling water and drain on paper towel.

  • Step 5: In a casserole that will hold the sausage in a single layer, spread the BBQ sauce evenly; stir in liquid smoke and the mushroom/onion mixture.

  • Step 6: Add the drained sausage to the same frypan and brown on all sides. about 10 minutes. Add the browned sausage to the casserole and spoon some of the bbq sauce mixture over them. Add the wine to the hot frypan to glaze the pan; pour the glaze over the sausage. Sprinkle the Parmesan cheese over.

  • Step 7: Place the casserole on the middle rack in preheated oven and bake 25 minutes.

  • Step 8: Serve with potatoes and veggies or serve alone on a hoagie bun.
