Ingredients

The ingredients are:
  • 2 cups tomatoes, diced up
  • 1 zucchini, medium, diced into half moons
  • 1 onion, diced
  • 1 jalapeno diced (or any other pepper you have available, we like heat)
  • 2 garlic cloves, diced
  • 1/2 cup corn (mine was cooked and cut off the cob, optional)
  • 1 tablespoon dried basil (or 3 tablespoons fresh)
  • 1 tablespoon balsamic vinegar (more if you like balsamic)
  • 3 tablespoons water
  • 1 tablespoon oil (olive oil)
  • Salt and pepper to taste

How to Make

  • Step 1: Add oil to pan and add veggies. Start to saute on medium. Cover but continue to stir. Stir to make sure they don't stick or burn. Saute for 15 minutes. Add balsamic, water and spices, cook for 5 more minutes.

  • Step 2: Serve!
