Ingredients

The ingredients are:
  • 2 tablespoons oil (olive oil)
  • 1 1/2 to 2 cups brown rice, cooked
  • 1/2 cup fresh corn (cut from a cob of corn)
  • 4 mushrooms, fresh (chopped)
  • 1/4 cup celery (small slice)
  • 2 garlic cloves (crushed)
  • 1/2 cup onion (chopped)
  • 1/2 cup chicken broth
  • 1 cup fresh spinach (rolled and thinly sliced - packed)
  • Salt and freshly ground pepper to taste

How to Make

  • Step 1: In a large frypan heat the olive oil over medium heat; add onion, mushrooms, garlic,celery and corn; saute until the onion is transparent, about 5 minutes. Add salt and pepper to taste and add the chicken broth; stirring well. Stir in the cooked rice, mix well; fry over medium heat for about 15 minutes, stirring occasionally. Stir in the spinach and continue cooking a further 2 minutes just until the spinach starts to wilt. Serve hot.
