Ingredients

The ingredients are:
  • 1 pound parsnips (fresh medium size parsnips, peeled, cut into bite size pieces)
  • 2 tablespoons olive oil
  • 1 tablespoon honey (clear honey)
  • 1 tablespoon soy sauce
  • 1 orange, whole (medium, juice and zest only). apprx 1/3 cup
  • Salt and pepper, to taste

How to Make

  • Step 1: Preheat the oven to 400f, pour oil in an oven proof pan, large enough to hold the parsnips in one layer, heat for 2 minutes.

  • Step 2: Add prepared parsnips to the heated oil, season with salt and pepper, toss the parsnips so they are coated with oil.

  • Step 3: Roast for 30 minutes. Check that they are cooked - if not continue cooking for a further 5 minutes.

  • Step 4: While the parsnips are roasting mix together the honey, soy, orange juice and zest.

  • Step 5: When the parsnips are baked add the sauce to parsnips, toss to coat, continue baking for a further 10 - 15 minutes or until the parsnips are carmelized.

  • Step 6: Serve drizzling any pan juices over them.
