Step 1: Dressing ... Mix all the ingredients in a small bowl or dish, then refrigerate until ready to use. I don't like to dress fruit too much ahead of time before serving.
Step 2: Toasted Coconut ... This can be done in the oven or on the stove top. I prefer the stove top - It only takes about 4-5 minutes on medium heat. Just keep an eye on it, and stir it often until the coconut is lightly toasted.
Step 3: Serve and ENJOY! ... Add the dressing to the fruit and toss; garnish with the toasted coconut.
