Step 1: Preheat oven to 350 degrees F then set oven rack to lowest position.
Step 2: Grease an 11 x 7-inch baking dish.
Step 3: Cook the sausage meat with onion in a skillet over medium-high heat until browned; drain fat; transfer to a large bowl, cool slightly then mix in the broccoli florets and 1/2 cup shredded cheddar cheese; set aside.
Step 4: In another bowl combine 1/2 cup shredded cheddar cheese with ricotta cheese, eggs, light cream, black pepper and cayenne; mix to combine, then season with salt if desired.
Step 5: Spoon the sausage mixture into baking dish, then top with the ricotta mixture over the top.
Step 6: Sprinkle with remaining 1 cup cheddar cheese or 1/2 cup Parmesan cheese.
Step 7: Arrange the tomato slices neatly over the top.
Step 8: Cover with foil and bake 30 minutes.
Step 9: Uncover and continue baking for another 15 minutes.
Step 10: Allow to stand 10-12 minutes before serving.
