Ingredients

The ingredients are:
  • 1 pound oysters (fresh shucked)
  • French baguettes (4 small "hoagie size" French baguettes, split and toasted)
  • 1 tomato (ripe, thinly sliced)
  • Lettuce leaves (I like organic leaf lettuce, shredded)
  • Remoulade sauce (I use my recipe "Simple Remoulade Sauce")
  • Cajun Fry Batter (I use my recipe "Cajun Fry Batter")

How to Make

  • Step 1: Drain oysters but do not rinse. They should smell sweet. If they smell off, don't use them.

  • Step 2: Mix together ingredients for the fry batter.

  • Step 3: Dip oysters into batter, then gently shake off excess; fry in hot oil a few minutes on each side then drain.

  • Step 4: To make po' boys, place lettuce and tomato in the bottom of a split toasted baguette, then fill with fried oysters and drizzle with remoulade sauce.
