  • 1/4 cup green bell pepper, chopped
  • 1/4 cup red bell pepper, chopped
  • 1/2 cup red onion, diced
  • 60 to 120 grams olives (1/4 to 1/2 cup black olives)
  • 1/2 cup olive oil
  • 4 tablespoons red wine vinegar
  • 2 teaspoons basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 to 1 cup feta cheese, crumbled (or cubed tofu)
