Step 1: In a medium bowl combine the first 11 ingredients, mix well.
Step 2: Spray a medium frypan with veggie spray; add the chicken mixture and scramble fry, mixing well until the meat is no longer pink, about 10 minutes; set aside.
Step 3: Lay the Tortillas on plates; line them with the lettuce leaves.
Step 4: Divide the cooked chicken mixture in two and add to each lined tortilla.
Step 5: Top with cheddar cheese and spoon 1/4 cup salsa on top of the cheese.
Step 6: Fold the tortillas over the filling as for a burrito; cut each in half so that each plate has two halves; spoon the remaining salsa across each.
