Ingredients

The ingredients are:
  • 1/2 pound ground chicken (or turkey)
  • 1/2 medium carrot (grated)
  • 1 egg (small, beaten)
  • 1 green onion (sliced thin)
  • 1 garlic clove (minced)
  • 1/4 cup dry bread crumbs
  • 1 tablespoon soy sauce (i use low sodium type)
  • 2 teaspoons fresh ginger (grated)
  • 1 teaspoon brown sugar (lightly packed - I use splenda brown sugar mix)
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste
  • Vegetable spray
  • Tortillas (two 9 inch- I use whole wheat)
  • 2 to 4 lettuce leaves
  • 1 cup salsa (your choice- divided)
  • 1/2 cup cheddar cheese (grated)

How to Make

  • Step 1: In a medium bowl combine the first 11 ingredients, mix well.

  • Step 2: Spray a medium frypan with veggie spray; add the chicken mixture and scramble fry, mixing well until the meat is no longer pink, about 10 minutes; set aside.

  • Step 3: Lay the Tortillas on plates; line them with the lettuce leaves.

  • Step 4: Divide the cooked chicken mixture in two and add to each lined tortilla.

  • Step 5: Top with cheddar cheese and spoon 1/4 cup salsa on top of the cheese.

  • Step 6: Fold the tortillas over the filling as for a burrito; cut each in half so that each plate has two halves; spoon the remaining salsa across each.
