The ingredients are:
  • 3/4 cup whole wheat flour
  • 12 ounces tofu (extra firm tofu)
  • 1/4 cup applesauce
  • 1/4 cup unsweetened cocoa powder
  • 3/4 brown sugar (packed)
  • 1/4 cup oil (olive oil)
  • Vegan chocolate chips or chopped nuts (about 1/2 cup, or mini semi sweet chocolate baking chips)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 to 2 tablespoons vanilla extract

How to Make

  • Step 1: Preheat your oven to 350°F.

  • Step 2: Spray an 8x8 pan with cooking spray.

  • Step 3: Place tofu, applesauce, sugar, oil and vanilla in a blender and blend until smooth.

  • Step 4: In a medium bowl combine flour, cocoa powder, salt and baking soda.

  • Step 5: Add tofu mixture and stir until well combined and smooth.

  • Step 6: Fold in the chocolate chips

  • Step 7: Pour batter into the pan (batter will be very thick).

  • Step 8: Bake for 30-35 minutes.

  • Step 9: Let cool completely before serving.
