Ingredients

The ingredients are:
  • 1 pound shrimp (large shrimp peeled and tails on, about 32)
  • 2 whole oranges (peeled and cut into segments)
  • 1 can (5 1/2 ounce) pineapple chunks in juice (drained and 1/4 cup juice reserved)
  • 2 green onions (sliced)
  • 1/2 cup orange juice
  • 2 tablespoon fresh cilantro (chopped)
  • 2 tablespoons lime juice
  • 2 tablespoons white wine vinegar
  • 1 tablespoon olive oil (or veggie oil)
  • 1 clove garlic (minced)
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried tarragon
  • White pepper (optional)

How to Make

  • Step 1: Marinating time 2 hours or up to 8 hours.

  • Step 2: Combine shrimp, orange segments, pineapple chunks and green onions in resealable food storage bag. Mix orange juice, reserved pineapple juice, cilantro, lime juice, vinegar, oil, garlic, basil, tarragon and white pepper, if using, in medium bowl; pour over shrimp mixture, turning to coat. Marinate in refrigerator 2 hours or up to 8 hours.

  • Step 3: Spoon shrimp mixture onto plates.
