Ingredients

The ingredients are:
  • 1/2 pound okra (totally dry fresh okra, cut into quarters lengthwise do NOT use frozen okra or cut into rings)
  • 2/3 cup bell peppers (sliced colored bell peppers)
  • 1 cup onion (slivered)
  • 1 cup chopped tomato (firm tomato)
  • 1 1/2 tablespoon oil (mustard oil or ghee)
  • 1/2 teaspoon cumin seed
  • 1/2 teaspoon mustard seed
  • 10 to 12 curry leaves
  • 2 hot red thai chillies, sliced
  • 2 teaspoons coriander powder
  • 1 teaspoon amchur powder (aka mango powder or sub 2 tsp. lemon juice)
  • 1 tablespoons ginger paste
  • 1 tablespoon garlic paste
  • 1/2 teaspoon turmeric
  • 1/2 cup yogurt (Greek)
  • Water

How to Make

  • Step 1: Heat oil in a large skillet and add chopped onion, curry leaves, chopped chillies, cumin seed and mustard seed; allow to cook about one minute or until it sputters.

  • Step 2: Stir in the coriander powder, amchur powder, garlic and ginger pastes and turmeric.

  • Step 3: Stir in the okra and pepper slices and cook, stirring, over moderate heat until the okra browns and is not slimy to the touch.

  • Step 4: Stir in the tomatoes and 1/2 cup water and cook until tomatoes soften and the mixture becomes a bit dry.

  • Step 5: Whisk together the yogurt with 1/4 cup water and quickly stir into the vegetables.

  • Step 6: As soon as it blends remove it from heat and serve.
