  • 1/2 cup carrot (julienned carrot strips)
  • 1/2 red bell pepper (cut into julienned strips)
  • 1 scallion, sliced
  • 2 tablespoons Splenda (brown sugar blend)
  • 2 tablespoons fresh lime juice
  • 1/2 tablespoon hot sesame oil (hot or toasted sesame oil and a splash of sriracha)
  • 2 tablespoons peanuts (chopped roasted peanuts)
