  • CUPCAKES
  • 2 1/2 cups whole wheat flour

  • 1 cup brown sugar (light)
  • 1 teaspoon vanilla
  • 1 cup buttermilk (fresh buttermilk 2 teaspoons white vinegar and 1 cup fat free milk)
  • 2 large eggs (fresh eggs)
  • 1 teaspoons white vinegar
  • 1 1/2 cup oil (canola oil or applesauce I prefer canola oil)
  • 1/4 cup cocoa (Dutch cocoa)
  • FROSTING
  • 2 1/2 sticks unsalted butter (softened)
  • 3 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 2 tablespoons fat-free milk
  • 1/3 cup Dutch cocoa

How to Make

  • Step 1: Preheat your oven to 350 degrees.

  • Step 2: Cupcakes:

  • Step 3: Mix wet ingredients, then add sifted dry ingredients until well blended.

  • Step 4: Fill cupcake tins half way.

  • Step 5: Bake for 18 minutes.

  • Step 6: Once done, cool on wire rack.

  • Step 7: Frosting:

  • Step 8: Cream butter.

  • Step 9: Add powdered sugar, vanilla, cocoa, milk a little bit at a time. (You want to be able to pipe the frosting).

  • Step 10: Whipped Buttercream Frosting:

  • Step 11: To make it Whipped Buttercream Frosing, you have to mix the frosting with an electric mixer, on high speed, for about 3 minutes.

  • Step 12: Place frosting in your piping bag, then frost cupcakes.
