Ingredients

The ingredients are:
  • 1 (4 pound) pork tenderloin roast
  • 1 cup salsa
  • 1 1/2 cups brown sugar
  • 1 cup Coca Cola soda drink (not diet)
  • 1 teaspoon garlic powder
  • Salt and pepper
  • 40 flour tortillas, 7-inch tortillas (two- 22.5 ounce packages, about 40 tortillas)
  • 2 cups Monterey Jack Cheese
  • Ranch Dressing, for dipping (or use whatever dressing is your favorite)

How to Make

  • Step 1: Place pork roast into a medium sized crock pot. Season the roast with garlic powder, salt and pepper.

  • Step 2: In a bowl mix salsa, brown sugar and Coke. Pour over roast.

  • Step 3: Cook on Low setting for 6-8 hours, or on high for 3-4 hours.

  • Step 4: Once pork is cooked, remove from crock pot and shred. Remove half of the sauce in the crock pot and return the shredded pork. Mix thoroughly with the remaining sauce.

  • Step 5: Lightly spray a cookie sheet.

  • Step 6: Place 1/4 cup of shredded pork on to a tortilla and roll tight. (A little juice may leak out but makes it all the yummier)

  • Step 7: Sprinkle the top with cheese.

  • Step 8: Bake at 375 degrees until the cheese melts, about 10 minutes.

  • Step 9: Remove from oven and let cool for about 5 minutes before serving.

  • Step 10: Place them on a platter with a bowl of Ranch dressing or your favorite dressing.
