Ingredients

The ingredients are:
  • 8
  • Ounces cream cheese, softened
  • 3
  • Ounces
  • Goat cheese, softened
  • 2
  • Tablespoons gorgonzola cheese, softened
  • 8 ounces fig preserves
  • 6 fresh figs (cut in quarters)
  • 2
  • Teaspoons honey
  • 1
  • Tablespoon fresh rosemary, minced fine
  • 1
  • Teaspoon pepper

How to Make

  • Step 1: Cheese ... Add all the cheeses, honey, rosemary and pepper to a small bowl. Blend with a mixer. This could also be done in a food processor. You want to use a mixer to add a little air to the mix to lighten it up a bit.

  • Step 2: Mold ... I like to use a small bowl lined with plastic wrap. Then add the cheese mixture and top with another piece of plastic wrap pressed right on top of the cheese. And finally, cover the entire bowl with another piece of plastic wrap. Refrigerate at least 4 hours until firm.

  • Step 3: Plating ... Remove the plastic top from the top and that over the cheese. Top with a plate and turn upside down. Then pull off the plastic wrap. Now you have a perfectly molded cheese dip.

  • Step 4: Figs ... Heat up the figs for just a few seconds in the microwave, right in the jar (lid off of course), you don't want it hot, just slightly warm; and pour over the cheese. Garnish with the fresh figs and maybe a sprig of fresh rosemary. Serve with the crackers and fresh fruit. DELISH and ENJOY!
