Step 1: Note: The cream cheese spread, onions, and eggs can all be made ahead; so, take advantage of that convenience.
Step 2: Cream Cheese ... Mix the cream cheese with the capers and olives. I like to use a mix of black and green; but, you could use one or the other. Note: If you can get the whipped cream cheese with onions and chives, it doesn't need to soften. But, I have found it isn't always available. Also, there are other brands other than Philadelphia; so, each brand is a bit different.
Step 3: Note - Red Onions: Some people don't like the strong flavor of onions. You can soak the red onions for 5-10 minutes in cold water, and it will take away some of the strong flavor. Then, just dry off; and, they can be store until ready to use.
Step 4: Bagels ... Use your favorite; I happen to love the "everything" bagel. The one that has all the toppings (sesame, poppyseed, garlic, onions, etc); but, use your favorite. I lightly toast mine.
Step 5: Finish ... Top your warm toasted bagel with the cream cheese spread, then a few red onion slices; and, finish with 1 sliced egg. Make sure to season with salt and pepper. It's easy, delicious, and a nice change from your classic bagel w/cream cheese - without much work. ENJOY!
