Step 1: Melt butter over low heat, saute onion until translucent (about 5-8 minutes).
Step 2: When onion is very close to being done, add the garlic and salt.
Step 3: Over the lowest heat, whisk in the flour a little at a time. Cook it for 3-5 minutes, stirring constantly, adding only a drop or two of water if it's getting clumpy.
Step 4: Add tahini and whisk for another few minutes, still on the lowest heat setting.
Step 5: Add remaining ingredients and simmer for 10 - 15 min over low heat. Adjust seasonings to your taste after it's simmered for at least 5 min.
Step 6: Great to use over brown rice, vegetables, etc.
